Tasty Tuesday: Easy Microwave Peanut Brittle

I just discovered this recipe and had to give it a try. It sure beats standing by a pot and stirring and stirring. BUT I must admit - the pictures below show a half burnt peanut brittle. I don't have pictures of a good one because I was out of peanuts! But the part that was not burnt was GREAT! **So warning - if you have a new microwave shorten the cooking time!!**


Microwave Peanut Brittle Ingredients:
1/2 cup dry roasted peanuts
1 cup sugar
1/2 cup light corn syrup
1 pinch salt
1 tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda


Directions:

1. Start by lining a cookie sheet with foil and spray the foil with cooking spray.

2. In a glass bowl mix the peanuts, sugar, corn syrup and salt.

3. Cook these ingredients for 4-6 minutes based on the power of your microwave.

4. Take it out and stir in the butter and vanilla.

(At this point I think my brittle was done)

5. Put it back in the microwave for 2 more minutes (or less!).

6. Quickly stir in the baking soda - it will bubble up and be foamy. Pour it immediately onto the cookie sheet.

7. Let it cool and break it into pieces. Enjoy!

If we weren't out of vanilla, I would seriously consider making this today. I had never thought of making peanut brittle in the microwave!

Wow, I would not have guessed peanut brittle would be so uncomplicated to make. This would be a great home-made Christmas gift to give.

I have a recipe like this too, and I love it!

A hint that helped me:
Try the minimum time first. - If the brittle turns out too chewy, increase the cooking time. When it was waaay too chewy, I microwaved it again even after it was all done and that helped make the batch more edible so it didn't threaten to yank out your teeth.

I've got it down so I know exactly how long it takes in my particular microwave and have noted it on my recipe.

That would look so cute wrapped up in little gift bags for Christmas! I have never made my own brittle before and this looks so easy. But I may have to eat some myself first ;)

I just butter the countertop and pour the brittle out that way. Then I stretch it very think using a couple of spatulas. It increases the mess, but that's just the way we like ours. Thanks so much for posting to Crock Pot Wednesday.
