The dog days of August are here and in Ohio it is finally heating up (yes, it's been a cool summer here!)! Yesterday we reached temperatures in the 90's! So we need something to cool us off! A favorite "semi-homemade" treat are these ice cream sandwiches - they are simple for the kids to help with and YUMMY!
Semi-homemade Chocolate Chip Icecream Sandwiches:
1. Bake chocolate chip cookies - I used Pillsbury's refrigerated dough (simple)!
2. I Used Chocolate Chip Cookie dough ice cream - take it out of the freezer to soften while the cookies cool.
3. Scoop one scoop of icecream onto one cookie - press another on top to make a sandwich
4. Dip it into sprinkles for an extra treat
5. Wrap each cookie in saran wrap.
Enjoy!

ReplyDeleteI tried something like that a couple years ago. They're really good!
ReplyDeleteYou can also lay them down on a cookie sheet to freeze. After they're frozen, stick them in gallon sized freezer bags and store for up to several months!

ReplyDeleteOoo--those look amazing. My cookies don't ever seem "sturdy" enough to hold ice cream...maybe I need to rethink how I'm making them. :)

ReplyDeleteYes, if you are like me - your family could eat a whole batch of chocolate chip cookies in one sitting!!! This way you can make a batch and eat some for dessert with dinner and save some for another day - by keeping them on hand as ice cream sandwiches in the freezer!
