Tasty Tuesday: Tuna Noodle Casserole with Fishy Crackers

This is a really fun recipe your kids will love! You can see in my cook book that it says the prep time is only 8 minutes - who doesn't love that kind of prep time?
Also, here's a tip for trying out new cookbooks. Mark in them the date of the first time you try a recipe and what the family thought about it. Someday my daughter will enjoy my cookbooks - not just for the recipes but also for the personal notes from her mother in the margin!Ingredients for Tuna Noodle Casserole with Fishy Crackers:
1 16oz package uncooked wide egg noodles
1 1/4 cup shredded cheddar cheese
1 10 oz can cream of mushroom soup
1 can sweet peas (I omited these - we are not fans of peas in our family)
1 can (6oz) solid white tuna in spring water (I used two cans)
1 5oz can evaporated milk
1 small onion
1/2 tsp. pepper
1 box tiny fish crackers

Directions:
Preheat the oven to 350 degrees. Boil the noodles and drain. Set aside the fishy crackers and some of the cheese for the topping at the end. Stir the rest of the ingredients together.


Pour the mixture into a lightly greased 9x13. Bake covered at 350 for 30 minutes. Uncover and sprinkle with remaining cheese and fishy crackers. (let the kids help you sprinkle the fishy crackers - this is really fun for them!) Bake 5 more minutes or until thoroughly heated.


Doesn't that plate make you smile!!

  1. Great tip about writing in recipe books. I am totally sentimental about family recipes and books. I have gotten in the habit of mailing my recipe cards to family members so they can write out their favourite recipes, and then I get them to mail it back to me. It makes cooking more personal and special to be connected to loved ones this way.

  2. I am always looking for new recipes for my kids. They are such picky eaters and finding things to eat sometimes is a chore. I can not wait to try this one out Courtney!

    Barbaranne - the name of the cook book is Southern Living Busy Moms Weeknight Favorites. It has a lot of great simple kid friendly recipes.

  13. I like 'quick' recipes too! For those with sensitivities to the stuff in canned soups, try plain yogurt instead and to make it look different for another time (and a completely new recipe ;-) try crushed potato chips on top.

    I think I'll make this tonight. There aren't too many people who don't like it! - which can't be said for all my recipes. :-) Thanks for the post!
